Outsiders Summit, Outside Van
For Outside Van’s 2023 Outsiders Summit, we held a day of outdoor cooking demonstrations in the woods of Sandy, Oregon.
We covered some essentials of van life cooking, including lightweight pantry equipment and ingredient curation, and adaptation of gourmet recipes for ease of cooking on the road.
Our seminar was sponsored by Bob’s Red Mill, Dillanos Coffee Roasters, and Travel Portland.
Some of the recipes we developed and taught were:
- Skillet Liege Waffles
- English Muffins and Basic Bread Dough (cooked over fire)
- Gnocchi and Mushroom Cream Sauce (entirely from dehydrated ingredients)
- Sous Vide Steak and Vegetables
- Apple Spice Cake (in the Instant Pot)
